Just as different cities take their own spin on pizza crust thickness, hot dog toppings or barbecue sauce, there are some pretty interesting regional styles of tacos, too. Each city\u2019s taco style is influenced by the availability of ingredients, the cultural history of the dish and fabric of the city itself.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">To unpack the distinct qualities of tacos across the United States, we spoke to the nation\u2019s top taco experts. From taco bloggers and journalists to taco cookbook authors and celebrity chefs, a whole gamut of taco aficionados tell us how the dish is represented in each of their cities. What\u2019s your regional taco style? Take a look at what the taco experts say, city by city.<br \/>\n<\/span><\/p>\n<p>[aesop_gallery id=&#8221;40071&#8243;]<\/p>\n<h2><strong>Los Angeles: The authentic-as-it-gets taco(s)<\/strong><\/h2>\n<p><b>Local expert:<\/b><span style=\"font-weight: 400;\"> Bill Esparza, renowned taco scholar, food writer for <\/span><a href=\"http:\/\/www.lamag.com\/author\/bill-esparza\/\"><span style=\"font-weight: 400;\">L.A. Magazine<\/span><\/a><span style=\"font-weight: 400;\">, and author of <\/span><a href=\"http:\/\/www.streetgourmetla.com\/\"><span style=\"font-weight: 400;\">Street Gourmet LA<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">No American city comes close to matching the depth of the culture and regional diversity of tacos of Los Angeles.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">There\u2019s no such thing as a \u201cstandard\u201d <\/span><a href=\"http:\/\/www.orbitz.com\/travel-guide\/United_States--CA\/Los_Angeles.tg4309\/\"><span style=\"font-weight: 400;\">Los Angeles<\/span><\/a><span style=\"font-weight: 400;\"> taco because cuisines from so many regions of Mexico are represented across the city \u2014 you can find food from about half of Mexico\u2019s states, Esparza says. Each region has their own taco style, then iterations on those styles. <\/span><\/p>\n<p><span style=\"font-weight: 400;\"> \u201cYou can get just about every type of taco imaginable,\u201d Esparza says. To demonstrate the depth of tacos in Los Angeles, Esparza even wrote a taco encyclopedia \u2014 a <\/span><a href=\"http:\/\/www.lamag.com\/digestblog\/tacopedia-a-complete-taco-encyclopedia-of-l-a\/\"><span style=\"font-weight: 400;\">tacopedia<\/span><\/a><span style=\"font-weight: 400;\"> \u2014 that covers 47 varieties. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Drawing from the availability of fresh California ingredients, the largest and longest-standing population of Mexican immigrants and the city\u2019s shear proximity to the birthplace of the dish, LA serves up the most authentic Mexican tacos outside of Mexico.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">For example, some of Los Angeles\u2019 al pastor tacos are cooked by pedigreed chefs who experienced working at top al pastor restaurants in Mexico City. \u201cI would say tacos here are 85% of what they are in Mexico City,\u201d Esparza says. <\/span><\/p>\n<h2><strong>New York: The boundary-pushing taco<\/strong><\/h2>\n<p><b>Local experts: <\/b><span style=\"font-weight: 400;\">Chef Alex Stupak, owner of <\/span><a href=\"http:\/\/empellon.com\/\"><span style=\"font-weight: 400;\">Empell\u00f3n<\/span><\/a><span style=\"font-weight: 400;\"> and author of upcoming cookbook <\/span><a href=\"http:\/\/www.amazon.com\/Tacos-Recipes-Provocations-Alex-Stupak\/dp\/0553447297\"><span style=\"font-weight: 400;\">Tacos: Recipes and Provocations<\/span><\/a><span style=\"font-weight: 400;\"> and Lesley T\u00e9llez, food writer and culinary guide behind <\/span><a href=\"http:\/\/www.themijachronicles.com\/\"><span style=\"font-weight: 400;\">The Mija Chronicles<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">With a fast-paced restaurant scene that\u2019s constantly reinventing itself, <\/span><a href=\"http:\/\/www.orbitz.com\/travel-guide\/United_States--NY\/New_York.tg17796\/\"><span style=\"font-weight: 400;\">New York<\/span><\/a><span style=\"font-weight: 400;\">\u2019s tacos are characterized by the line-blurring nature of the city\u2019s blended cultures. Whereas other cities may stick to more traditional styles, New York celebrates new ideas. Even if something sounds a little crazy, New Yorkers are willing to try it. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cNew York has a willingness to experiment with the cuisine and taste it at many price points,\u201d says Stupak. \u201cIn California and Texas, and Chicago, you have very very large and well-ingrained Mexican communities,\u201d says Stupak. \u201cThat ingrained culture \u2014 that\u2019s the missing ingredient in New York City.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Kimchi tacos. Tuna wonton tacos. Lobster tacos. Stupak has even provocatively prepared a French dish and plated it on a tortilla to challenge people\u2019s perception of the taco. For al pastor tacos, his restaurant is the place to go. \u201cWe wentto Mexico City, ate every al pastor we could find and concocted our own way of making it.\u201d The pork shoulder is roasted on a spit and the tortillas are made in house. \u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">But what if you want an good old-fashioned homestyle taco \u2014 like one you might get in Mexico City? Lesley T\u00e9llez has searched far and wide for that hometown taste, but has found that New York isn\u2019t quite there yet. When ordering tacos from a taqueria in New York, T\u00e9llez has observed that the construction is the same, but the quality of ingredients affects the end result. She finds that the salsa isn\u2019t as fresh, the tortillas are store-bought, and the seasoning doesn\u2019t have the same punch. She\u2019s also noticed that tacos in New York often come laden with extra ingredients like gratuitous crema, cheese, lettuce or guacamole. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">T\u00e9llez hasn\u2019t yet been able to find tacos exactly how she gets them at home, butshe has a solution: She makes them at home herself. <\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.orbitz.com\/blog\/2013\/06\/our-guide-to-austins-best-food-trucks\/\" target=\"_blank\" rel=\"noopener\"><strong>Related: You&#8217;ve got to try these 7 Austin food trucks.<\/strong> <\/a><\/p>\n<h2><strong>Dallas: The brisket taco<\/strong><\/h2>\n<p><b>Local expert:<\/b><span style=\"font-weight: 400;\"> Jos\u00e9 R. Ralat, founder of the <\/span><a href=\"http:\/\/thetacotrail.com\/\"><span style=\"font-weight: 400;\">Taco Trail<\/span><\/a><span style=\"font-weight: 400;\"> and food editor of <\/span><a href=\"http:\/\/www.cowboysindians.com\/\"><span style=\"font-weight: 400;\">Cowboys &amp; Indians<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><a href=\"http:\/\/www.orbitz.com\/travel-guide\/United_States--TX\/Dallas.tg22742\/\"><span style=\"font-weight: 400;\">Dallas<\/span><\/a><span style=\"font-weight: 400;\"> is known for soft tortillas stuffed with juicy, tender beef that\u2019s been braised overnight. Born at <\/span><a href=\"http:\/\/www.miastexmex.com\/\"><span style=\"font-weight: 400;\">Mia&#8217;s Tex-Mex Restaurant<\/span><\/a><span style=\"font-weight: 400;\">, the brisket taco is dressed poblano strips, sauteed onions and Monterey Jack cheese.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">But that\u2019s not all Dallas has to offer.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cDallas is often thought of as Tex-Mex country or gas station taco country, but that&#8217;s no longer true,\u201d says Ralat. \u201cWithin minutes, anyone can sample tacos done in the style of Sinaloa, Monterrey, Sonora, Oaxaca, Mexico City, Zacatecas, Jalisco and, of course, Tex-Mex.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">With a large immigrant population from Monterrey, Mexico, Dallas has many restaurants where the meat is carved off of a spinning trompo spit. \u201cThese tacos are similar to Mexico City&#8217;s tacos al pastor, with pork slowly roasted,\u201d says Ralat. \u201cBut instead of a chile-achiote-citrus marinade, tacos de trompo get a paprika-heavy seasoning.<\/span><\/p>\n<h2><strong>Chicago: The hot-off-the-tortilla-press taco<\/strong><\/h2>\n<p><b>Local expert:<\/b><span style=\"font-weight: 400;\"> Titus Ruscitti, Chicago\u2019s self-proclaimed taco expert and man behind <\/span><a href=\"http:\/\/chicagotacotour.blogspot.com\/\"><span style=\"font-weight: 400;\">The Chicago Taco Tour<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><a href=\"http:\/\/www.orbitz.com\/travel-guide\/United_States--IL\/Chicago.tg7840\/\"><span style=\"font-weight: 400;\">Chicago\u2019s<\/span><\/a><span style=\"font-weight: 400;\"> nickname as the second city comes into play to describe its taco culture. With the largest Hispanic population second only to Los Angeles, the city has an expansive offering of tacos. \u201cFrom mom and pop supermercados on the corner to hipster hangouts, we got it all,\u201d Ruscitti says. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cChicago has a large immigrant population from Michoacan, so carnitas, which were born in that state, are well-represented,\u201d says Jos\u00e9 R. Ralat.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Chicago\u2019s largest claim to taco fame? Fresh tortillas. With the most tortillerias in the world, a fresh, warm tortilla is never far away \u2014 even for Chicagoans cooking at home, who can buy local and freshly made tortillas at most grocery stores.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Since a great taco starts with a great tortilla, Chicago hasaccess to one of the most important building blocks to serving high-quality tacos.<\/span><\/p>\n<h2><strong>Austin: The breakfast taco<\/strong><\/h2>\n<p><b>Local experts:<\/b><span style=\"font-weight: 400;\"> Melanie Haupt, Austin food blogger and freelance writer and co-author of <\/span><a href=\"http:\/\/www.amazon.com\/Historic-Austin-Restaurants-Generations-American\/dp\/1626191239\/ref=sr_1_9?ie=UTF8&amp;qid=1443204257&amp;sr=8-9&amp;keywords=Melanie+Haupt\"><span style=\"font-weight: 400;\">Historic Austin Restaurants:: Capital Cuisine through the Generations<\/span><\/a><span style=\"font-weight: 400;\"> and Armando Rayo, creator of <\/span><a href=\"http:\/\/tacojournalism.blogspot.com\/\"><span style=\"font-weight: 400;\">tacojournalism.com<\/span><\/a><span style=\"font-weight: 400;\"> author of upcoming book <\/span><a href=\"https:\/\/www.facebook.com\/tacosoftexas?_rdr=p\"><span style=\"font-weight: 400;\">The Tacos of Texas<\/span><\/a><span style=\"font-weight: 400;\">. <\/span><\/p>\n<p><a href=\"http:\/\/www.orbitz.com\/travel-guide\/United_States--TX\/Austin.tg22730\/\"><span style=\"font-weight: 400;\">Austin<\/span><\/a><span style=\"font-weight: 400;\"> is known for their breakfast tacos topped with with eggs, bacon, and cheese. Other ingredients that make a delicious Austin-style breakfast taco? Sausage, brisket, or migas. Or perhaps all of those things at once, with potatoes. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cIf you go outside Texas and look for breakfast tacos, you&#8217;re probably not going to find exactly what you&#8217;re looking for,\u201d Haupt says. \u201cOr you won&#8217;t find them at all. Breakfast tacos are a major food group in Austin. It&#8217;s a huge part of our culture as a city.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">You can also find a variety of traditional styles straight out of the Mexican and Tex-Mex tradition such as barbacoa, al pastor, machacado, tripas and lengua served on corn tortillas. Restaurants serving gourmet fusion tacos have also started popping up. Haupt calls them \u201cstunt\u201d tacos. These might have fried egg and escabeche, a chicken finger, or octopus in a crispy tortilla shell. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cBecause tacos are such a big deal here in Austin,\u201d she says \u201cyou see a lot of people playing with the form and testing the boundaries of what you can wrap in a flour or corn tortilla and call a taco. <\/span><\/p>\n<p style=\"text-align: center;\"><strong><a href=\"https:\/\/www.orbitz.com\/blog\/2015\/05\/the-5-best-margaritas-in-the-country\/\" target=\"_blank\" rel=\"noopener\">Related: These are the country&#8217;s best margaritas.<\/a><\/strong><\/p>\n<h2><strong>San Antonio: The puffy taco<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">San Antonio is known for their Tex-Mex style puffy tortillas. Fresh masa balls are pressed in a tortilla press, then deep fried. After just under a minute in hot oil, they\u2019re puffy on the outside, and soft and airy on the inside. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">You won\u2019t find tortillas prepared like this in Mexico, but that doesn\u2019t make this style any less authentic. Armando Rayo describes the taco culture in Texas as part Mexican, part American, 100% Texan.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cThere are Latino families that have been in Texas before Texas was Texas,\u201d points out \u00a0Armando Rayo. \u201cYou will get those cultures infused in the food, from the flour tortillas to the Tex-Mex that we grew up with in the Lonestar State.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The most important requirement for a dish to qualify as a taco? \u201cTherestill needs to be a tortilla,\u201d says Rayo. \u201cIt&#8217;s not a taco if there is no tortilla. Do not be fooled by the taco bowls or lettuce wraps!\u201d<\/span><\/p>\n<h2><strong>Miami: The razzle dazzle taco<\/strong><\/h2>\n<p><b>Local experts: <\/b><span style=\"font-weight: 400;\">Carina Ost, food writer for <\/span><a href=\"http:\/\/www.miaminewtimes.com\/authors\/carina-ost-6330907\"><span style=\"font-weight: 400;\">Miami New Times<\/span><\/a><span style=\"font-weight: 400;\"> and Jen Karetnick, dining critic for <\/span><a href=\"http:\/\/www.modernluxury.com\/miami\"><span style=\"font-weight: 400;\">Modern Luxury Miami<\/span><\/a><span style=\"font-weight: 400;\"> and cookbook author of <\/span><a href=\"http:\/\/www.amazon.com\/Mango-Jen-Karetnick\/dp\/0813049164\/ref=sr_1_1?ie=UTF8&amp;qid=1443204050&amp;sr=8-1&amp;keywords=Jen+Karetnick\"><span style=\"font-weight: 400;\">Mango<\/span><\/a><span style=\"font-weight: 400;\">. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">With so many Latin American influences, in <\/span><a href=\"http:\/\/www.orbitz.com\/travel-guide\/United_States--FL\/Miami_Beach.tg5460\/\"><span style=\"font-weight: 400;\">Miami<\/span><\/a><span style=\"font-weight: 400;\"> you\u2019ll find tacos that are a hybrid of many cultures. That could be a fried chicken, duck confit or even a fungus mushroom taco. There\u2019s always something surprising tucked inside.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cUnless you\u2019re at a traditional Mexican taqueria, expect some Magic City razzle dazzle,\u201d says Karetnick. \u201cWe can&#8217;t let anything go without our own little touches, which range from playing around with the crema to replacing the lettuce with kale.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Ost says Miami tacos are characterized by trying new flavors and having a bit of fun. \u201cIt\u2019s more showy. Let\u2019s dress it up, and let\u2019s go crazy. You lose a little bit of the political correctness you might find in the Bay Area.\u201d<\/span><\/p>\n<p>Join us in chowing down on a taco or two.
