Dining

Craftsteak
Celebrity chef Tom Colicchio insists on the finest ingredients from small family farms and other specialized venues. A James Beard award-winning chef, Colicchio is emphatic when it comes to creating menu items that appeal to all lovers of fine food. Using the purest ingredients and a philosophy that simpler is better, he makes every dish burst forth with flavor. While this famous steakhouse offers mainstays like Kobe Beef, it also tempts your taste buds with veal, salmon and lobster dishes.
Nobhill
Inspired by San Francisco neighborhood eateries, chef Michael Mina has organic produce and poultry flown in direct from San Francisco to capture the taste and feel of the Bay Area. The James Beard award-winning chef's signature dishes like North Beach Cioppino and Lobster Pot Pie pay tribute to the City by the Bay, while the cozy bar and lounge make guests feel right at home.
Pearl
Cuisine with an essence of the Canton and Shanghai provinces, prepared utilizing the four Chinese cooking methods: steamed, braised, baked and fried. Although live seafood is the specialty, chef Kai-Wa Yau prefers a menu that is constantly changing to take advantage of seasonal offerings. The masterful cooking is paired with a serene and contemporary Chinese atmosphere.
Emeril's
You've seen his TV show, you've read his cookbooks, now sample the signature dishes of one of America's most popular chefs - Emeril Lagasse. The celebrity chef gives Las Vegas fine dining his signature "bam!" With scallops from Maine, pike from the Midwest, and chicken from Alabama, Emeril's serves a fresh and distinctive blend of Creole/Cajun specialties. Add to that a wine list that received Wine Spectator's 1999 "Best of Award of Excellence," and funky New Orleans architecture, and you'll feel closer to Bourbon Street than the Vegas Strip.
Shibuya
Expansive and spectacular, it's the ultimate destination for Japanese cuisine. Direct from the stylish Tokyo district that bears its name, Shibuya features freshly prepared ingredients, stellar sushi, and the widest sake selection this side of the Pacific. All served in an airy and ambient setting. Experience the sleek urban elegance of Shibuya. And transport yourself to the Far-from-ordinary East.
Fiamma Trattoria
Straight from SoHo, where it earned the coveted Three Star designation from The New York Times, Fiamma presents traditional Italian cuisine in sleek, sexy surroundings. Enjoy cocktails fireside before or after dinner. But it is the food that is the star.
Diego
Traditional recipes hand-picked from the Mexican countryside create the foundation for Diego's bold menu. Then he makes them completely his own. Using honest ingredients and modern techniques, he enlivens authentic Mexican dishes with new twists to create new favorites like carne asada or cochinita pibil. You'll find the bright and vibrant restaurant just as exciting as the food.
Seablue
Featured on the cover of Wine Spectator, SEABLUE is the creation of James Beard award-winning chef Michael Mina. Inspired by the bustling ports and marketplaces of the Mediterranean, the innovative restaurant's two lively open kitchens prepare seafood over a wood-fired grill. The ocean theme is carried throughout the space with walls of stone and water.
Grand Wok and Sushi Bar
A culinary cross-section of Chinese, Japanese, Thai, Korean and Vietnamese, the Grand Wok satisfies your craving for Asian cuisine. So, where to start? How about the sushi bar? With so many choices, you'll find something new every time you visit. The restaurant's bamboo and black granite accents make the perfect backdrop for the cascading waterfall and polished stone pond.
Wolfgang Puck Bar & Grill
One of the most recognizable names in food today - Wolfgang Puck - reinvents American bar and grill food. Here, you'll find a unique interpretation of California cuisine prepared with a new spirit. The combination is best described as beachfront bistro meets classic bar and grill. And the taste is, well, let's just say you have to try this one. After all, a Wolfgang Puck restaurant is more than a restaurant, it's an experience.

I came to Signature for my sister's birthday weekend. I arrived Wednesday, Jan 4 and departed late evening on Jan 8. The hotel was very clean, the concierge's were helpful. For the price and service and the look I was very happy. Thank you. Claudia B

Penthouse room

We had an beautiful, large room on the 32nd floor penthouse level. Everything was clean and comfortable. The only surprise was getting charged an extra $22/day "resort fee" after fully paying in advance for the room. Apparently, this fee covers bottled water, internet services and a few other things that would normally come free with most hotel rooms. Otherwise, our stay was great.

Great stress reliever!

Perfect for a 4 day getaway. Walking through the doors makes you feel like you are in a spa. The atmosphere is very relaxing, before you get to the room. The rooms were spacious and tastefully decorated with vases and artwork. , Huge bathroom with glass shower and the tv (for all you sports fanatics) and offered a good view of the surrounding hotels from the balcony without the noise. Signature is connected to MGM through walkways, so you never have to go outside. The staff are extremely courteous and remember who you are. The only drawback was the valet parking. We are spur of the moment folks, and didn't like to have to wait for it to be brought around. There is self-parking a little ways away nearer to MGM, but not the best option early in the morning.

Dining tip: Short drive from hotel

There is a shopping center on Las Vegas Blvd left of the airport. A Fantastic local eatery: Miller's Ale house had the best food at REASONABLE prices. Great wait staff, and huge seating area. And, there must have been 45 flat screens all over the place.

Quite Getaway in the heart of Vegas

The Signiture Suites are a beautiful luxury alternative to the hotels on the Las Vegas strip. It is a non-smoking, non gambling hotel with all the amenities of the MGM Grand. The all suite hotel was understated elegance only a few steps away from the glitz and action on the strip. The best feature is the giant jacuzzi tube in the spacious bathroom. We have enjoyed our stay on several trips to Las Vegas.

Bit of a walk to casino but good value

Room was very comfortable and had a large bathroom with jacuzzi tub, shower stall and double sinks, a nice king size bed and a microwave, a small fridge and electric cooktop if you want to make yourself a bite to eat. Finishes was all nice and classy and the room had a very nice decor. Only complaint was the tv was kind of small for a room this nice. Wireless internet was free and worked well for the most part but will be kind of slow if you want to stream video. I was in tower 3 - the farthest from the main casino and the studiowalk area and it didn't bother me at all, but if you want to be closer to the action then stay in the main MGM hotel. I thought it was a good value for the money. The staff was friendly and I enjoyed my stay.

Quiet and Clean

Everyone at the hotel was very friendly and accomodating. Very pleased with the design. Only concern was the water temperature. It would take a while for the water to get hot and then it would be too hot. It took some time to get the right temperature. Love that the pool was open during "winter".

Great place to stay in Vegas without "smoking"

One of my favorite aspects of staying at the Signature is avoiding the smoke that you normally encounter at most hotels that have casinos on the ground floor. The Signatue is also much quieter than hotels without casinos in the same building. The room layouts provide a very comfortable feeling for extended stays. A great workout area and healthy food options keep me returning whenever I have Las Vegas travel.

Will stay there the next time too!

This was our first trip to Las Vegas and we definitely want to return soon. I enjoyed it at The Signature because it's away from the casino and the smoke. The staff is gracious and attentive. I spoke with one gentleman who travels to Las Vegas for business and he said there is no where else he would want to be. You have to be willing to get some exercise to get places on your own but the staff will have a taxi there for you in just moments after you place the request. We were there in January so did not get to use the pool. Next time, next time...

The monorail terminal is located just outside the MGM Grand. Go ahead and invest in the 3-day pass. You can access all the big hotels and casinos, their shows and attractions, without having to walk the entire way from the south end of the strip.
